Discovery

The shelves and counters of Prekas’s grocery store in Hermoupolis, Syros groan and buckle under the weight of innumerable glass jars, paper packets and cellophane sachets of Greek sourced delicacies. Some are house products while many others are chosen by the owner and showcased.

The roundfaced and jolly Kostas Prekas always makes his recommendations to me and this is where I found Elli & Manos products. Charmingly named after its founders, the company was created in 2010 by Elli Nikolaou and Manos Pasoulas.

Their core philosophy is to select premium ingredients, such as mustard seed, vinegar, garlic and chilli in order to create unusual combinations. All of their products are free of additives and artificial ingredients and stand out because of their strong flavour that makes them perfect for a plethora of culinary uses.

Our site features two mustards, a spicy one and one with garlic. Confirmed by Elli, they both have a very strong flavour. “A spicy mustard has to be spicy”, she emphasizes.

The owners love cooking and try out new flavours with family and friends so they can then introduce them to their customers.

They work with retailers and restaurants and export overseas also.

Memory

Elli & Manos, an exclusively wholesale company, was founded by Elli, an occupational psychologist, and Manos, a mathematician.

It was started with Simply Delicious, founded in 2001 which operated until 2008. It begun as a high end delicatessen in Kifisia, a lifestyle store, which was very innovative back then, with a huge variety of teas and cookbooks.

Having gained useful lessons from their retail store experience, nine years ago they felt ready to take the next step and produce signature sauces and spreads.

The first product they came up with was an orange dressing used on salads or as marinade, which they were very proud of.

Narration

Elli & Manos consists of a small team of five employees. The brand’s offices and warehouses are located in Avlonas, Attiki.

Both of them come up with the idea and a recipe and get excited when they taste their products for the first time. They finds it fulfilling when the brand grows in popularity on an international level.

A member of the Brassica family, the mustard plant bears tiny, edible but tasteless seeds. In English, the name mustard, is derived from a contraction of the Latin mustum, as it was originally made with grape must.

The Romans were the first to prepare mustard as a condiment, similar to which we know today, by grinding mustard seeds and mixing them with wine. They planted the mustard seed in Gaul, where mustard soon became a very popular condiment. French monasteries have been selling mustard since the ninth century.

In the 1770s, Maurice Grey and Antoine Poupon first made the renowned Dijon mustard, Grey Poupon.

In 1814, Jeremiah Colman, founder of Colman’s Mustard of England, perfected the technique of grinding mustard seeds into a fine powder.
